Edisto Shrimp & Grits

3 Cups Water

1 Cup White Stone Ground Grits

1 ½ Cups Half and Half

Salt to Taste

Dollop of Butter

Handful finely chopped Tomatoes and Onions

1 lb Shrimp, fresh, peeled and deveined

½ Cup White Wine

Grits: In a saucepan, bring water to boil and add grits slowly. Cover and reduce heat to low, stirring occasionally. As grits thicken, add half and half. Continue to cook for 1 hour, stirring occasionally.

Shrimp Gravy: Melt butter in a sauté pan and cook onions and tomatoes over medium-high heat until it begins to caramelize. Add shrimp, mix with onions and tomatoes; cook until shrimp turn pink. Stir in white wine slowly. Continue until wine has reduced and shrimp are cooked.

 Assemble by plating grits in a rimmed dish. Spoon shrimp and sauce over grits. Serve hot.
