South Carolina Style Barbecue Beef Sandwich
Our friend Barry knows a thing or two about South Carolina Barbecue. His famous family has been involved in cooking barbeque for over 80 years with a string of restaurants. Our recipe below can easily be made in your home crockpot without the need of a full barbecue pit and smoking meat all day.
Barry’s South Carolina Style BBQ Beef Sandwich
1 Beef Chuck Roast (3 – 4 lbs)
1 Packet Dry Onion Soup Mix
1 Cup South Carolina Style Mustard based Barbeque Sauce
1 ½ Tablespoon Liquid Smoke
Place beef roast in crock pot. Pour 1 cup Barry’s BBQ Sauce over beef, sprinkle dry onion soup mix over roast. Cover crock pot and set on High for 30 minutes. Lower temperature setting to Low and keep covered for 5 hours. Add liquid smoke and cook for another 30 min. Remove beef from crock pot and shred. Add additional BBQ Sauce and some of the cooking juice until desired consistency. Serve on sliced hamburger buns with a side of Barry’s BBQ Sauce. Try topping with sliced onions, sliced pickles or a slice of cheese.
