Grits are a southern staple and have been a fixture in Charleston cooking since the original settlement of 1670. Use stone ground grits for the a traditional Shrimp and Grits recipe. Stone ground grits differ from store bought "Quick Grits". In Quick Grits, the outside of the corn kernel has been removed to reduce cooking time. As a result, the consumer loses a large amount of flavor and texture. While cooking stone ground grits will be a bit longer process, the end product is much different.
When cooking stone ground grits, typically it is a 4:1 ratio of liquid to grits. This ratio can be reduced depending upon how one enjoys their grits cooked.
