We us this method at home when using Moss' breader to fry chicken. Combine buttermilk with a few dashes of hot sauce. Place the meat in the buttermilk mixture and marinate for 15 minutes to an hour. Heat oil to 325F degrees in a heavy pot or Dutch oven. Use a resealable plastic bag and add enough of the chicken breader mix to coat the meat. Add more breader to the bag as needed. Lightly shake off excess buttermilk mixture from the meat and place chicken in the plastic bag with the breader. Move the meat around inside the bag to evenly coat with the breader. Place meat in hot oil and fry until golden brown, turning as needed. Ensure meat has reached at least 145F and remove from oil. Drain excess oil and place on paper towels. Serve when complete for a Southern style feast.
